green smoothies with ginger

Are green smoothies the new cupcakes? Everybody seems to be making them, or at least claiming to. Well here's my entry into the sweepstakes. I've based it on one from my pals Mary and Sara, but  my version tastes less vegetal and is super-duper emerald green. I thicken it with chia seeds (although you can use sunflower seeds or other nuts) and all my green smoothies have to have ginger in them.

makes 2 servings

prep time: 10 minutes


1 cup packed torn organic kale leaves (see note)
1 green apple, peeled, cored and chopped
1 tablespoon chia seeds, optional
1/2 inch piece fresh ginger, peeled and grated

1 cup organic cranberry-pomegranate juice, such as Knudsen

squeeze of lemon juice

Put the kale, apple, chia seeds and ginger in a blender; pour in the cran-pom juice and lemon juice. 

Blend until smooth. Drink right away (it will thicken as it stands from the chia seeds).

note: I prefer Tuscan kale, but curly kale works, too. Strip the leaves off the stems and tear leaves into pieces, rinse them and pack into the measuring cup. Discard stems. 

The lemon juice works to preserve the color more than anything, so I don’t add much. Also, everyone recommends using a high speed blender, such as a Vitamix, for best results, but I’ve always made smoothies (including these) in my Hamilton-Beach from the Five & Dime and I love the coarser texture a cheaper blender gives.
