really easy green enchiladas

Bright, fresh and no frying or baking!
The name says it all: there are 3 ingredients in this recipe, no more, no less.
You don’t have to own a real tagine to make this—a Dutch oven or other heavy pot works great.
At the interview with James Oseland of Saveur, the knockout nosh was these chicken wings from Smokestack’s barbecue in Kansas City.
This is a healthy version of the classic, enchiladas with a side of virtue….but still as much cheese.
