oatmeal scotchies

It is baking season and even if you are a klutz in the baking department (which I am), these cookies will have everyone swearing they are the best thing they’ve ever eaten. And they are, even though the recipe is basically from the back of a bag. That would be a bag of butterscotch chips, one of those childhood tastes I’ve never outgrown.
ingredients
1/2 cup plus 2 tablespoons all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 stick unsalted butter, softened
3/4 cup firmly packed brown sugar
1 egg
1 teaspoon vanilla extract
1-1/2 cups quick or old-fashioned oats
1 cup butterscotch chips
directions
Preheat oven to 375°F. In a small bowl, stir together flour, baking soda, and salt. In a larger bowl, beat butter, brown sugar, egg, and vanilla with an electric mixer or wooden spoon until smooth. Gradually beat in flour mixture, then stir in oats and butterscotch chips. Drop cookies by the spoonful onto ungreased baking sheets and bake, switching pan positions halfway through, until golden, 8 to 10 minutes. Let cool on racks.
note: this recipe easily doubles for a party or gift-giving. A double amount will use a whole 12-ounce package of butterscotch chips.
