orange-roasted figs

I’m a fig freak, naturally, since I come from California where 98% of the nation's fresh figs are grown. When the season comes around (generally, May to November), I break out recipes for fig and gorgonzola crostini, fig galette, and my current favorite, roasted figs with orange juice, which take moments to put together and are especially good with Greek yogurt ice cream.

8 to 12 ripe figs, halved or quartered, depending on size
3/4 cup freshly squeezed orange juice
2 tablespoons honey
|
Preheat an oven to 375°. Place figs in a medium-size baking dish, such as a 7x11-inch rectangular one. In a small saucepan, stir together the orange juice and honey over medium heat until honey is melted. Pour over fruit and bake until fruit is glazed and sauce is thickened, 35 to 45 minutes.
